With the invention of the Crockpot and Instantpot, it is now easier than ever to make one-pot meals. And there is no better time than winter! After a day in the snow and cold, your family returns home to a slow-cooked, hot masterpiece that has been simmering all day, waiting to warm you up. One-pot wonders are great for large families. You throw all the ingredients together in one pot and it makes prep and clean-up quick and easy. Here are some of our favorite recipes:

COZY RECIPE ALERT 🚨 This minestrone soup is perfect for chilly winter days ❄️ It’s very similar to Olive Garden’s minestrone soup, and is probably my all time favorite vegetarian soup! • In a large soup pot, sauté 1 diced onion, 2 stalks diced celery, 1 sliced zucchini & 2 diced carrots in 1 tbsp olive oil, for about 5 mins. Add 1 can white cannellini beans (rinsed and drained), 1 can diced tomatoes, two 32-ounce cartons of vegetable broth, 2 tsp minced garlic, 1 tsp salt, 1/4 tsp pepper, 2 tsp dried oregano, 1 tsp dried parsley, 1 tsp dried savory and 1/4 tsp dried basil. Bring to a boil and simmer covered for 20 mins. Add 3 cups fresh spinach and 1 1/3 cups shell pasta, cover and cook until pasta is cooked through. Recipe👉Slow Cooker Ultimate Roast (whole30/Paleo) __ As promised, here’s the roast recipe from Monday’s IG story. __ Slow Cooker Ultimate Roast (whole30/Paleo) 2-3 lb roast 1 onion, sliced 1 lb sweet potatoes (I used purple), chopped 3 carrots, chopped 1 lb asparagus or green beans Sauce: 3/4 cup low-sodium beef broth 2 tbsp steak seasoning (see below) 2 ghee, melted Add onion to bottom of slow cooker. Add all other ingredients on top. In a small bowl, mix together sauce ingredients. Pour sauce into slow cooker. Cook HIGH 4-5 or LOW 8-9. This heathy soup is not only DELICIOUS, but it has anti-inflammatory properties as well! (Slightly adapted from @restoring_radiance … go check her blog for the original recipe!) In a large pot, sauté 1 diced onion, 3 large carrots and 4 stalks of celery in 1 tbsp extra virgin olive oil, until tender. Add 4 cloves minced garlic, 1 tbsp minced lemongrass and 1.5 tbsp minced ginger to the pot. Sauté for another minute. Add 32 oz chicken broth, 2 large chicken breasts, 1 tbsp turmeric and salt/pepper. Bring to a boil, and simmer for about 30 mins (until chicken is cooked through). Shred chicken, return to pot and squeeze in the juice of 1 lemon. Recipe👉Slow Cooker Spaghetti Squash & Meatballs. . . This is from yesterday's IG story. Its whole30, paleo & low carb. I'm reposting this so people will stop DMing me for the recipe:) This has been on the blog since January. Slow Cooker Spaghetti Squash & Meatballs 2 lb spaghetti squash 28 ounces diced tomatoes (or a bottle of your favorite marinara sauce) Meatballs: 1 lb ground meat (I used @JennieO extra-lean ground turkey) 1 egg 2 tbsp almond flour (I used @bobsredmill) 1 tsp basil 1 tsp oregano 1 tsp rosemary 1 tsp thyme 1 tsp salt 1/2 tsp pepper 1/4 tsp red pepper flakes Pour diced tomatoes into the bottom of the slow cooker. Cut spaghetti squash in half, crosswise. Scoop out the seeds and add to the slow cooker, hole side down. Add all the meatball ingredients to a large mixing bowl. Mix together well with your hands until all the ingredients are blended together. Form mixture into small 1-inch size meatballs. Add meatballs to slow cooker in the tomato sauce. Cook HIGH 3-4 or LOW 6-8. To serve – remove spaghetti squash from the slow cooker. It will be very hot so use oven mitts. Let squash cool then rake a fork back and forth across the squash to remove its flesh into spaghetti-like strands. It just didn't feel right to post about food yesterday. Perhaps I just couldn't find the right words to say…or perhaps I was in "listen-only" mode…but yesterday's Vegas tragedy has been weighing on me. So I will say this….Despite all of the evil in this world, I still believe there are many more GOOD people doing amazing things everyday. And, every day truly is a gift ❤️ Now about this apple crisp…it's a healthier version I whipped up on the spot and I will try and list the steps for you below! 👇🏻 Peel and chop 5 large apples. Toss with 1 tbsp cinnamon, 1/4 tsp nutmeg and 3 tbsp coconut sugar. In a separate bowl, combine about a cup of quick cooking oats, 1/4 cup coconut sugar, 1 tbsp cinnamon, 2 tbsp whole wheat flour and enough coconut oil to saturate the mixture (about 1/3 cup). Pour apple mixture into a coconut oil-greased cast iron skillet. Top with oat crumble mixture, and bake at 350 for one hour. Drizzle 1/3 cup maple syrup over the apple crisp, and enjoy!
